ROASTED SEAFOOD WITH EMON AND HERBS

Prep time: 25 minutes
4 serves

Yum – Italian meets paleo for our culinary delight.

INGREDIENTS

8 large green prawns

8 scampi – cleaned and halved

8 scallops – on the half shell

¼ cup of olive oil

2 garlic cloves – chopped

1 lemon – zest and juice

1 lemon – wedges to serve

2 tablespoons of thyme – chopped

2 tablespoons of flat leaf parsley – chopped

METHOD

Preheat oven to 390F.

In a large baking dish, place all seafood in a single layer.

In a jug, combine oil, garlic, zest, juice a thyme.

Pour over your seafood.

Pour in the oven and bake for 10mins.

Place parsley over the top with lemon wedges and serve straight onto the table. Yum!
