That's awesome. Do you know the science behind that? I spent so many years thinking protein was king... and now I'm learning that might not be the case at all... I'm fascinated by it all.

Maya has been reading/research/viewing a lot of research about the microbiome and there is a lot there about how bad dairy and meat are for your gut and microbiome and can negatively impact all sorts of systems. I suspect this is at least part of it.
