This is the healthiest opinion about the off grid that I read here. To me it also doesn't mean that when you live off grid you automatically disconnect yourself from the rest of the world. It is indeed important to maintain the community and to share your experience, tips and tricks. Thank you for sharing your story. I hope you will inspire many people!

And congratulations on your new lifestyle. It does sounds exciting. I'm planning to ferment my cabbage at home too. So you say that the best place is in a closet? I was not sure where to put it :)

Thank you so much. The reason I keep mine in my closet is because it is sublevel and stays a very nice consistent temperature without a draft. I lucked out with that, as it stays an almost constant 72 deg F. 😂 I was doing my lactoferment on the kitchen counter and buch /kefir in the closet for a while, but now just fermenting everything in that one spot. Makes for some truly interesting odors when I open that closet door 😂
