Glass Noodle Salad

Simple and refreshing Thai inspired salad that is easy to make and so appetising. You can replace the calamari with shrimp or even combine the two seafood to give extra yum to the salad.

Ingredients

  • 3 oz or a bunch of glass noodle

  • 2 medium sized calamari, sliced into rings

  • 1 tbs sugar (or to taste)

  • 4 tbs lime juice

  • 3 tbs fish sauce (or to taste)

  • 5 small red or green chilli, sliced

  • 6 shallots, sliced

  • 1/2 cup coriander leaves

  • 1/2 cup spring onion, chopped

  • 1 tbs dried shrimp, rehydrated and fried

  • 3 heaped tbs coarsely chopped roasted peanuts

Method

  • Soak glass noodle in water for 30 minutes. Strain and set aside.

  • Mix sugar, lime juice, fish sauce, sliced chillies in a bowl and set aside.

  • Blanch glass noodle and calamari in a pot of boiling water and drain.

  • Add the sauce to the glass noodle and calamari and mix well.

  • Add coriander, spring onion, shallots, fried dried shrimps and chopped roasted peanuts. Toss well.
