Recommend you "jack" your cider and try it. Allow full fermentation into wine, then freeze the result, removing the ice every morning until the alcohol content climbs. You'll be left with "Applejack". Delicious, the way you're SUPPOSED to drink spirits-- not boiled in the still where you lose all the taste and nutrients.
Hey. Sorry for super late response. I'm still getting to know this ecosystem and finally see how to see all replies without looking through threads. Better late than never, yes? Regarding mushroom advice, my best is to join the local mushroom club in your area and go on forays until you have some confidence to go alone. Boletes are an easy beginner mushroom, as are chanterelles and morels.
