My Traditional Delight|| "Ekpang Nkukwo Recipe"

Everyone loves to eat healthy food that is why we have different kind of foods across the globe and how to prepare them differs, so today i bring to you ekpang nkukwo recipe, ekpang nkukwo is made with water yam, this party dish is closely associated with the akwaibom state culture, akwaibom state is the south-south geopolitical zone of nigeria ekpang nkukwo is one is the special local cuisine that has existed long time ago.

Most people are familiar with wateryam and the have different ways to prepare them and it turn out to be a delicious meal, wateryam is the main ingredient for this special dish (ekpang nkukwo) so lets get down to the preparation process.

Ingredients

• wateryam
• cocoyam leaves
• perewinkles
• cow skin
• mackerel
• Crayfish
• scent leaves
• seasoning cubes and salt to taste
• palm oil

peel the wateryam wash it till its clean then cut into size i can hold to blend

i blend the wateryam with crater you can use blender to blend it as well then i added salt to taste.

The i began wrapping the blended wateryam using young cocoyam leaves i repeat the process till i wrap all the blended wateryam.

After wrapping all the blended wateryam i added ingredients like cowskin, perewinkles mackerel fish seasoning cubes and salt, i had already added salt before i started wrapping so this time is going to be just a little.

I poured in hot water into the pot of wrapped wateryam this hot water with help the wateryam stay firm in the leave then i put the pot on fire and let it cook for 10 minutes.

I poured in my blended pepper and crayfish stir it with a spatula and allow it cook for another 5 minutes,

I added oil and scent leaves stir it and let it cook for another 3 minutes, after 3 minutes my delicious ekpang nkukwo was ready for consumption.
