Healthy Vegetarian Recipe: Quinoa & Black Lentil Salad 🥑🍅🥒🌶️

Hi dear Steemit Friends!

Today I share my recipe for perfect vegetarian salad. This salad will provide you with all the nutritional values ​​that vegetarians are worried about. Diet without meat can be easy, delicious and varied.

The salad is based on two products:  

  • quinoa - a naturally gluten-free, contains aminoacids that are a complete source of vegetable protein. Rich in minerals such as magnesium, calcium or iron; 
  • black lentils (belluga) - a source of very well assimilable protein and potassium, iron or folic acid. 

For beautiful colors and doses of vitamins, antioxidants and healthy fats I used: avocado, mango, pepper, cucumber, tomatoes.

Ingredients:

Salad:

  • 1/2 cup of quinoa
  • 1/2 cup of black lentils
  • 1/2 or 1 ripe mango
  • 1 ripe avocado
  • 1 red or yellow capsicium
  • 2 tomatoes
  • 1 cucumber
  • 1 onion (in the season I recommend a spring onion)
  • parsley or coriander

Sauce:

  • a piece of fresh ginger
  • 1 or 2 cloves of garlic
  • olive oil
  • 1 tablespoon of lemon juice
  • a teaspoon of honey or syrup
  • salt and pepper to taste

Preparation:

1. Cook quinoa and black lentils. 

Before cooking, thoroughly rinse the quinoa and lentils with water. Then cook them in separate pots in salted water.  

2. Cut the vegetables and fruits.

While the quinoa and lentils are cooked, we prepare the remaining ingredients: all vegetables and fruit are thoroughly washed, depending on the needs we peel and cut into cubes.  

3. Make the sauce.

Pour some tablespoons of olive oil into a bowl, add lemon juice, honey or syrup, ginger and garlic grated on a small grater, pepper and salt, mix thoroughly.  

4. Prepare a salad.

In a large bowl, mix the cooled quinoa and lentil with sauce, onion, pepper, cucumber and chopped parsley or coriander. Then add mango, avocado and tomatoes, gently mix all the ingredients.

Another great post Moni. Quinoa is so popular in Ecuador and Peru. Two countries that I've spent a lot of time in. You're food looks so healthy. I've been eating way less meat these days! Good for the animals and I'm starting to get that healthy glow that you have! I'm easing my way into possibly cutting it out all together. Tough for a guy like me. But I'm seeing the benefits.

I am so proud of you that you eat less meat. I know it is not easy, especially when traveling.
In Poland quinoa is quite expensive, so I'm jealous you have easy access to it ;)) quinoa contains a lot of protein, along with beans or lentils, it's great for vegetarians.

Thanks Moni! I can imagine that's quite an import. I lived in Hong kong for a year, quinoa was through the rough in price. In Ecuador I'd buy a lb for like 30 cents! That's what one thing I love about traveling, enjoying what each country produces. Now let's not even get into the high end 5-10 dollar bottles of wine in Chile! Unreal!

It's not spicy, but if you add a lot of ginger can be a little spicy.
