Let's Sweeten Your Day With Fluffy Lemon Muffin

Craving for some sweet food for snacking? Here, I have created the perfect and fluffy lemon muffin that can go in cupcake's mold or regular cake with some decorations.
I love muffin because it's faster to bake and easy to prepare, store, or bring anywhere as we hike. Even at home, just microwave for 10 seconds and serve with homemade whip cream and it's good to sweeten your day.

Ingredients

5 eggs (room temperature)
1/2 cup unsalted butter (room temperature)
1 3/4 sugar
1 3/4 all purpose flour + 2 tbsp
lemon zest from 1 lemon
2 squeezed juice
pinch of salt
1 teaspoon of lemon extract
1 teaspoon vanilla extract
1 1/2 teaspoon baking powder
1 teaspoon baking powder
1/2 cup coconut milk

How To Make It

Separate yolks and egg white in two different bowls then add 2 tbsp of sugar into the egg whites and beat until steep peaks or stand straight foam, set aside.

In another bowl, combine all purpose flour, salt, baking powder and baking soda. Set aside.
Preheat the oven to 350°F.

Add butter and sugar into the yolks,in high speed beat until it's fluffy and light color, then add vanilla,lemon zest and lemon extract. Alternately add the dry ingredients with coconut milk follow with squeezed lemon juice (you can use spatula first then beat with low speed) and carefully with spatula fold the meringue or egg white into the batter in clockwise direction.

Fill 3/4 muffin's mold with the batter and bake until cook or when you insert toothpick will comes out clean.

Serve or refrigerate a week to 10 days.

@cryptopie, yes you can add some nuts or dried fruit but my son is allergic to all kind of nuts.

Like you I love muffins, I remember couple of years ago I was looking for recipe and it was hard to find one. Now reading your recipe and seeing how light and airy they are I need to try to bake. Very appetizing :)

Basically the recipe above you can use as a basic ingredients for any cake, then you can take it out the "lemon ingredients" and replace with any ingredients you prefer.
And a little trick if you want your muffins look pointy after bake, make your batter also a little pointy when you fill up the muffin's mold or otherwise ....

Very nice! Love the photos. I wish I had an oven! hahaha

I'm on a small island in the gulf of Thailand now, and very few apartments come with an over. Ya know, thai food is a lot of stirfry, so in the this country to have an oven is like a western thing. But I could go out and buy a small toaster oven kind of thing that would be just good enough to start baking again.

I used to make these awesome butternut squash muffins, with a creamy lemon zest topping that looks a lot like the topping in your photo. So gooood!

It remind me I had an old oven back then that used on regular stove. It worked well to bake some cookies n cake. I love a simple life, except for stir fry too much food ...˙˚ʚ(´◡`)ɞ˚˙

Oh wow, an oven that works on a stove, that is new to me, sounds good though.

I'm actually from Albany New York. I left almost 20 years ago now. Been traveling the world and living internationally all this time. So for now Thailand feels much more like home than New York. I'm really happy here. I used to come back to visit family once or twice a year, but since covid I've been in Thailand.

Yes, I hear a lot of people are leaving CA ...higher taxes, inflation, expensive housing, poor job market, not to mention all those covid lockdowns. Are things as bad as I hear? Maybe it's all exaggerated. Will you stay in CA?

Thailand is so good to me. I live so well here on only about 700 dollars a month. Amazing how far your money goes here. Rent is only 270 dollars a month all included, and that's for a brand new small house, and massages are about 6 dollars an hour! You are welcome to come to Thailand and be my neighbor. :)

Oh yeah, you mentioned that you're from NY b4, sorry @world-travel-pro, I'm getting old.
We're actually planning to leave CA to my own country (Indonesia) in few years, feel like we're minnow around big whales.
It will be the best option for all us then living pay check to pay check and nothing left for our self.
Yep, we'll be a neighbor, Thailand to Indonesia isn't that far.

BTW, just an update about the Oven, this kind of oven works well to use on top of regular stove.

Second, wow you are Indonesian! Yeah, one of the biggest misconceptions foreigners have about America is that they are gonna make all this money, but often never realize that the cost of living, especially in California can be higher then all that money make and it's still near impossible to save and get ahead.

My secret to getting ahead has been living in less expensive countries from Mexico to Argentina, Eastern Europe, to all over South East Asia, while working from my computer earning close to a first world income. With the income of the west and living expenses of places like Indonesia or Thailand, then you can suddenly build wealth quite easily. Just need to figure out the working from your computer part, that can certainly be easier said then done. For, me, my blog has been a huge part of that, and investing wisely. But during the bear crypto bear market things can be a bit frustrating.

But that is great you are moving home. I'm sure you will be happier there. I ve technically been to Indonesia, not sure if Bali counts though...hahaha. Last time I was there was 2019, I made friends with a few locals, they said they think Bali should be their own country, then said.... but that will never happen.

I assume you would be moving back to the main Island of Java? Will be great to have you back in this part of the world, close enough to be my neighbor!

Being smart with "American Dream" is beyond, got an opportunity to live it is another level. I'm so grateful to learn many things, especially finance and money that no school teach that.

Honestly, I've never been to Bali but definitely in my check list beside Komodo Island. Yeah, i don't think government will let Bali go!

I'll be in Java Island yeah, and West Java is my choice since I was born and grew up there.
