I found this quote on a vegetarian website and have read it in a few other places - When you eat spinach that has been heated, you will absorb higher levels of vitamins A and E, protein, fiber, zinc, thiamin, calcium, and iron. Important carotenoids, such as beta-carotene, lutein, and zeaxanthin, also become more absorbable. We steam ours with some ginger and garlic its very good.

umm maybe you are right. By the whenever i boil tomatoes for soup or other vegetables i always put some spinach in it. It enhances the taste as well as make it more healthy.

Can you tell me where you found that? Sounds pretty interesting!

If you google raw versus cooked spinach you will find quite a lot of articles about it. It not to say raw is not beneficial but seems like some people think the lightly steamed might be better for nutrient absorption.
