Rice Noodle with meat sauce/ 家的味道-杂酱米粉

身为一个湖南人,在外面最念念不忘的就是家楼下那碗米粉。米粉店在湖南,是比夜宵摊还勤快的存在,早上最早拉开卷闸门的大多是米粉店。米粉是湖南人早餐的最高配置,其重要程度大概和美国人早晨的那杯咖啡一样。米粉里最重要的是浇头,湖南人叫码子,码子基本决定了一碗米粉的味道好坏。湖南人的米粉最常见的码子有杂酱,排骨,牛肉和三鲜。今天想和大家分享杂酱码子的做法:

  1. 准备好猪肉末,里面加生抽,白胡椒粉,鸡蛋一个和少量生粉搅拌均匀。
  2. 冷锅烧油(小火),加入郫县豆瓣酱翻炒,炒出红油后加入肉末炒散。
  3. 炒出香味后加入高汤(没有高汤用水代替)
  4. 大火烧开后转小火熬40分钟。
  5. 最后开大火收汁,加入盐,鸡精和酱油调味。就完成啦!

Rice Noodle with meat sauce is a classic breakfast in my hometown. Good meat sauce is the key to make a delicious rice noodle. Let's see the steps!

  1. Marinate ground pork with soy sauce, white pepper powder, an egg and some starchy flour.
  2. Stir fry the marinated pork with chili bean sauce.
  3. Add broth (or water) into the sauce
  4. Simmer for 40 minutes.
  5. Add some salt and soy sauce. It's done!

You can put the sauce on top of rice noodle, noodle or even rice!
