CREMA DE LANGOSTA
Ingredientes
1 y ½ Tazas de agua
550 gramos de carne de langosta ( con las langostas enteras)
90 gramos de mantequilla
3 cucharadas de cebolla cabezona blanca picada finamente
3 cucharadas de harina de trigo
5 tazas de leche
1 pizca de nuez moscada molida
1 papa grande pelada cocida y hecha puré
1 cucharada de vino jerez (opcional)
¼ de taza de crema de leche
Sal y pimienta al gusto
Preparación
Ponga a hervir el agua y cocine las langostas durante tres minutos. Escúrralas, quiébrelas y retire la carne (conserve el agua de la cocción). Píquela y resérvela,
Ponga a derretir la mantequilla en una olla grande y fría la cebolla con la sartén tapada por algunos minutos. Agregue la harina, sal y la pimenta y cocine durante dos minutos, revolviendo constantemente, Añada gradualmente la leche, la nuez y el puré de papas y continúe la cocción a temperatura baja por 10 minutos o hasta que todos los ingredientes estén incorporados (Revuelva ocasionalmente). Agregue el agua de la cocción de las langostas, su carne, el jerez y la crema de leche y cocine por 10 minutos más, sin dejar hervir. Ponga un poco mas de sal y pimienta si es necesario y sirva acompañado de galleras o pan tostado
NOTA
También puedes preparar esta crema reemplazando parcial o totalmente la langosta por camarones o langostinos
