How to prepare jamaican ackee and saltfish

Ackee and salt fish is one of the most delicious dish in my island Jamaica , just Shaing how I prepare it at home , and how many thing it can be paired with to be enjoyed , awesome my country Jamaica . Upvote if you know Jamaica is awesom.

Ingredients

½-pound salt fish
fresh ackee boiled, or tinned ackee
1 medium onion, chopped
1 small sweet pepper (yellow/red or green), chopped
1 medium tomato, chopped
3 cloves of garlic, minced
1 teaspoon scotch bonnet pepper, chopped finely (omit if you don’t want the dish spicy)
2 stalks scallion and tyme, chopped
1-2 table spoon cooking oil or any oil preferred by you
Seasoning salt and black pepper for added taste

Directions

Put saltfish to soak in cold water for about 1 hour.
Pour off water; add fresh water and boil until tender OR you get the desire salt removed .
De-bone and flake the saltfish.
Heat oil and cook up onion, garlic, scallions, tyme,tomatoes, scotch bonnet pepper and sweet pepper until tender, or to your desirable texture
Add flaked saltfish, fresh or canned ackee and black pepper.
Stir all ingredients untill all the ingredients are mixed together cover and allow to stand over low heat for about 2 minutes.
And Enjoy!
You can pair this dish with roast breadfruit, fry breadfruit, fry dumplings , boil dumplings , boil banana , Irish potatoes, and yam , this can also be enjoyed with bammmy , rice , bread , roti . This is a versatile dish , it's clear to me now why this is our national dish
