Szechuan Chicken
Ingredients:
-2 tablespoons Szechuan peppercorns
-1 teaspoon black peppercorns
-2 tablespoons vegetable oil
-1 pound boneless, skinless chicken breasts, cut into 1 inch cubes
-3 cloves garlic, minced
-1 teaspoon fresh ginger, minced
-1/2 cup chicken broth
-2 tablespoons soy sauce
-2 tablespoons rice wine or dry sherry
-2 tablespoons hoisin sauce
-2 teaspoons sesame oil
Instructions:
In a small skillet, toast the Szechuan and black peppercorns over medium-high heat for 1-2 minutes, stirring frequently. Remove from heat and set aside.
Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
Add the garlic, ginger, and toasted peppercorns and cook for 1 minute.
Add the chicken broth, soy sauce, rice wine or sherry, hoisin sauce, and sesame oil. Bring to a boil, reduce heat to low, and simmer for 10 minutes.
Serve over steamed rice.
