CASSAVA(PREPARATION OF FUFU)
PRODUCT DESCRIPTION(cassava)
Cassava is very important and essential in Nigeria ,as many of our food is derived from cassava which is woody shrubs(manicot esculenta) which is grown in tropical region.The starchy tuber root of cassava tree is used as food of different kinds in Nigeria.
DIFFERENT FOOD DERIVED FROM CASSAVA.
We have:
1.TUBER- cassava can be boiled and enjoy with varieties of stews.
2.FRIED CASSAVA(GARRI)
3.AMALA(CASSAVA FLOUR)- dry grinded cassava peels.
4.ABACHA-boil the cassava,peel off the back and cut the remaining into tiny pieces. Thereafter, it is soaked in a clean water over the night to get the starch out,the slippy deposit is washed off the actual food which then as a local salad.
5.CASSAVA VEGETABLE- cassava leafs used to prepare vegetable soup by some in nigeria, but must be cooked properly to detoxify before eating.
6.CASSAVA BREAD
These are the reasons why cassava crops production is a money spinner in nigeria which smart marketers can take advantages of and make million.
PREPARATION OF FUFU
Fufu flour is fermented wet-paste made from cassava. Fufu is very rich in carbohydrate and has smooth texture. Traditionally,it is produced in the wet form with moisture content of 40-50 percent with a offensive characteristics odour.In order to increase it shelf live, improved fufu production process has been developed.
PRODUCTION PROCESS OF FUFU
PEELING- the roots are peeled to remove the peels.
WASHING- the peeled cassava roots are washed thoroughly.
SOAKING- steeping in water to ferment for 4-5 days.
PULPING AND SIFTING- the softened roots are pulped with sifted using a substantial quantity of water.
SEDIMENTING- the slurry is allowed to sediment under gravity over a period of time.
DRYING- the granualated fufu cake is dued to yield grits at about 10% moisture content.
SIEVING-the dried grits is subjected to size seperation.
BLENDING-the original sievate is blended with the milled coarse particles.
MILLED- the coarse particles are collected and milled to desired particle size.
PACKAGING- the fufu is packaged appropriately.
CONCLUSION
Fufu can be eaten with different nigerian soups such as the popular egusi soup, ogbono soup, afang soup, white soup,okro soup E.T.C.
