I love to eat pork sisig, my helper knows how to cook it too. Bu I noticed when we eat or order it from the restaurant, it comes with egg?? Hmm well I usually order not the hot and spicy so they give a hot and spicy sauce for those who want. I just put calamansi and fish sauce (patis)
Sometimes the egg is still whole.

If there's a Giligans or Dencio's in Iloilo you should check them out. They serve good pork sisig! :)
