This recipe is a hearty and nutritious staple in many parts of Africa, beans and fried plantain also remains one of the special foods in Nigeria.

Need a few tips on how this African meal is prepared? This is all you need know

INGREDIENTS
3 cups beans
1 bunch ripe plantain (about 5 pieces)
4 medium tomatoes
4 small fresh red peppers
2 medium red bell peppers
1 medium sized onion bulb
3 garlic cloves, minced
1 cup palm oil
2 seasoning cube
1/2 teaspoon ground pepper
Salt to taste

PROCEDURE
Add 6 cups of water to a pot and set on medium heat. Wash beans thoroughly to rid it of excess dirt and place in a pot of boiling water.
Next, add tomatoes, red bell peppers, fresh red peppers, onion bulb and garlic cloves in a food processor or blender. Blitz for 30 seconds on medium speed till a not-so-smooth purée is formed.
Heat up palm oil in a small pot and add blended purée. Stir gently and leave to fry on medium heat for 5-7 minutes. Stir occasionally to prevent burning.
When beans are 80% cooked, add fried blended purée and all other ingredients. Stir gently and leave to cook until beans is soft. Add water if more is required.
Wash ripe plantain thoroughly and peel off the skin.
In a mixing bowl, slice ripe plantain in whatever shape you desire, add salt to taste, mix thoroughly to combine.
Next gently drop ripe plantain piece by piece into the hot oil with a cooking tong but be careful not to over crowd the pan. Fry on both sides for 3-4 minutes or until lightly browned.
And behold, the meal is ready to be served. It goes alongside Cassava flakes(Gari) or with Bread.
