Contabo Restarts VPS Server Ocassionally
TLDR; Contabo restarted my server from time to time and they kept denying it.
When your server is in particular high load, it will be restarted without any given notice. This happens a few times. My backup witness server was rebooted a few times.
I've added a crontab reboot event, so that I get any the email notification when the server reboots.
I've just finished restoring the backup witness server and it is working again.

That is very annoying. Especially because a running node cannot tolerate a shutdown. It hasn't happened to me that often, but I'll have to remember the idea of the reboot script.
Yes, (1) we should have backup servers at different VPS vendors and (2) we should not deploy critical services on contabo.
