What's On The Menu Today? #21 - WHAT'S COOKING CHALLENGE (Part 2)

This is my second take on "What's Cooking Challenge" by @jaynie!

I was tagged by @yashny about a week ago, and I really want to keep this cooking challenge going with more recipes at hand. This is my own twist on Salmon Teriyaki Salad! Like always (based on my kitchen's inspiration), this dish will not take a long time to prepare and cook, and most of the ingredients may already exist in your kitchen cabinet and refrigerator... well, except for salmon for this time. Not everyone has it in their kitchen, everyday, right? So, let's get started!

Ingredients:

  1. 1 cup of brown sugar
  2. 1/4 cup of soy sauce
  3. 2 tablespoons of honey
  4. 3 tablespoons of garlic powder/seasoning
  5. About 35ml of water
  6. Olive oil
  7. One piece of salmon fillet
  8. Black pepper for seasoning
  9. 50g of diced avocados
  10. 100g of Romaine lettuce salad
  11. 50g of red bell pepper
  12. A pinch (or two) of salt
    *Please change the above measurements to suit your taste palette. :)

Steps for the teriyaki sauce:

  • Heat up a small cooking pot over a medium heat.
  • Add in the brown sugar, honey and some water.
  • Let it fuse together for awhile as you stir it gently.
  • Then, add the soy sauce and garlic powder/seasoning.
  • Continue to cook until the teriyaki sauce reduces down and thicken slightly (about 15 to 20 minutes).
  • Your kitchen will start to smell really good with this homemade teriyaki sauce. Well, if you want to skip this step, just go ahead and get the ready-made teriyaki sauce from the store. Meh.

Steps for the salmon fillet:

  • Heat up a separate pan over a medium-high heat for about 3 minutes.
  • Then, increase the heat to a high heat.
  • Drizzle a little olive oil and a pinch of salt on the skin side.
  • Add the salmon fillet, skin side down. Leave it to cook for about 5 minutes, or until skin is crisp.
  • Then, turn it over. Reduce the heat to medium-high.
  • Finish your cooking for another 5 minutes, or until cooked to your liking.

Steps for the salad:

  • Wash clean all salad ingredients.
  • Dice the avocados.
  • Chop the red bell peppers.
  • Add the avocados, red bell peppers, and the Romaine lettuce salad onto your serving plate.
  • Add your cooked salmon fillet, with some dash of black pepper seasoning.
  • Drizzle the teriyaki sauce over it. Yummmm...
  • AND YOUR SALAD IS READY! :D

Ever since I moved out of my home country, I have started cooking a lot more, and just experimenting with different recipes. It worked brilliantly, and at times, things have gone wrong in the kitchen too. HAHAHAA! Oh welp! :D

You really love salad don't you? really a healthy alternative and I would love to try too. But I am so in love with rice I might ditch the salad and substitute with rice. Lol. thanks for sharing yummy yummy

Mmmm, @iamjadeline, actually I eat more salad here in Thailand due to huge intake of oily food and carbs here. That's why I have to switch some meals to salad-based meals. :D

That salmon was cooked to perfection! The crispy fish skin looks extremely tempting. I am definitely not a big fan of teriyaki as I prefer savory than sweet. But I guess it would be really nice for anyone who is a fan of teriyaki :) Good luck :)
