I am moving to Canada with my family on a visitor’s visa. How do we change our status to a study or work visa?

First of all, you are not “moving” to Canada on a visitor visa. If you are dumb enough to try that, border officials will figure out that you are trying to game the system when you arrive at the airport, you will be denied entry, your visitor visa will be canceled and you and your family will be put back on a plane home and banned from Canada. Canada does not take kindly to immigration fraud which is what you are describing. A visitor visa DOES NOT allow you to move to Canada or live in Canada. It certainly does not allow you to work in Canada.
