Lowbudget lowcarb zucchini recipe
Low carbohydrate cooking does not have to be expensive, contrary to what many people think. Below a nice low-budget courgette recipe.
low-carb food does not have to be expensive!
The following recipe is for 2 people.
Ingredients:
2 zucchinis
300 grams of minced meat
3 tomatoes
1 red pepper
1 green pepper
1 onion
250 grams of mushrooms
30 grams of Grana Padano
Italian spice mix
And then what?
Make strings of zucchini with a spirelli. Sprinkle some salt (so that the moisture pulls out) and put between a few pieces of kitchen paper.
Put the tomatoes together with Italian spice mix in a blender or bullit, this is your sauce.
Rump the meat until it is nicely browned. Add the peppers, onions and mushrooms and fry them for a few minutes. Then add the sauce and let it simmer for a moment.
In a separate pan you wok the courgettes in a little butter or oil for about 3 minutes.
Now you can add the zucchini strings to your minced-meat-vegetables-sauce-thingy.
Enjoy!
