Two methods to shoot insert/cut-in shot at filming: One-camera method or Two-camera method.

1. One-camera method: If you have only one camera, shoot everything for the main scene first, especially with the speech. Then later, do close-up shots of the cut-ins you want to show, without the talking. Overlay the scenes during the edit.
2. Two-camera method: If you have two cameras, one shoots the main scene and the other shoot the close-up. This is useful when doing live mixing, otherwise, you can edit them later.
