Molasses Ginger Cookies

Tell me you have a good mixer? First put the vegan butter and the sugar into your mixer and cream them together. After you’ll add everything else and mix it together. If it looks a little too soft add a fourth a cup more flour or a child’s handful.

Chill your dough 30 to 45 minutes in the freezer.

If you haven’t already preheated your oven to 350 do it now. Roll the chilled dough out between flour dusted parchment paper and cut the dough with your favorite cookie cutter shape. When the oven is hot and cookies are cut cook the cookies for 8 minutes. At this point I would definitely recommend setting a timer because so many times I have burnt them! Humble cookies we could call them. And if you want them soft do not overcook them. Get to know your oven some will need an additional minute or two. When they have cooled dust them with powdered sugar and enjoy!
