Steemit Photo Challenge - SPC #44 - Vegan Chickpea "Omelette" with Onions, Kale, & Zucchini.

This is only my second post, and my first entry into the #SteemitPhotoChallenge, but because the theme is food, I couldn't resist. And seeing how this is my first attempt at the SPC, I figured it was only right to show my first attempt at something, in this case a vegan "omelette" made with chickpea (or garbonzo) flour. It's really a take on the Indian dish "besan ka cheela," and is probably more akin to a crepe or pancake than an omelette (but it sure looks like one). I filled it with onions, zucchini, and kale--next time I'll probably do more vegetables and try to make it a little thinner, because it turned out more pancakey than I was hoping for. But pretty happy for my first attempt. 

And of course I added some sriracha to the omelette and ketchup to the potatoes.
