How do I get prepared for a two-day flight as a vegan diabetic? ๐ซ๐๐ฑ๐ช
After spending 6 months in Mexico, it's time to go back to Hungary and finally see my lovely family again ๐จโ๐ฉโ๐งโ๐ง๐ค๐
I haven't been active on Steemit in the last 2 months because I've been travelling all over Mexico nonstop, but here is my participation in my favourite Vegan Steemit contest again, held by @lenasveganliving. ๐ค
So after spending 6 months in Mexico, I'm finally going home to Hungary to spend some time with my family again. I'm.so excited to see them ๐ But my trip itself is gonna be exhausting... I'll be travelling for 2 days with lots of stopovers and layovers... So as being on a Low-Fat, Plant-Based, Whole Food Diet, I need to make sure to have enough food with me for the entire trip, coz I can't eat the food served on the airplane, and I usually can't find anything at the airports either.
So I prepared some quinoa with tomato-mushroom salsa and raw zucchini for lunch and dinner,
and I have lots of bananas and apples with me to have enough for breakfasts and have some in case of hypoglycemia, too.
I also stocked up on some healthy snacks, such as raw jรญcama,
as well as chili&lime flavoured, dehydrated corn and banana chips, because I'm definitely gonna crave for some snacks when I'll see everyone eating chips and chocolate on the plane...
My carry-on is extremely heavy, filled only with food, but at least I'm all set for the two-day trip ๐
I have celiac disease and have to do the same food prep when I travel.
The good thing is I eat my favourite healthy foods and arrive to destination less tired. :)
That's so true! I was thinking about the same today while travelling... I used to eat lots of junkfood while travelling, because even just like seeing others eating chips and other unhealthy snacks make you crave foe them, and since I'm vegan dianetic, at least I never eat uhealthy food anymore. That's so cool!!! I love this lifestyle :)

I am so happy to see you my Dear and thank you for sharing this delicious and nutritious meal you are making. I cannot even imagine being on the plane that long. If I would go to Slovakia form Canada, it would take ten hours, which is already very long. But if I do, I will definitely have to prepare some food to go as well. So thank you for your tips. I will keep them in mind for a future.
I am also so curious about your adventures in Mexico. I hope you will be shraing them with us soon.
Thank you so much Lena!! Yes, it's extremely long... my long haul flight between Mexico City and Madrid takes is 11 hours, but I have other stopovers, too, and have long layovers, that's why it takes 2 days. But finally I'll be home within a few hours ๐

It is a very delicious root vegetable, grown in Latin-America. It's my favouritr in Mexico :)
