Recipe: Patatas Bravas
Hi steemians! ☀ Today I'm sharing a recipe of patatas bravas, another delicious traditional Spanish dish. It was so fun to make it vegan and it turned out even healthier and tastier than the original. I hope you like it :)
Patatas Bravas is one of my favorite Spanish tapas. There are so many different recipes out there and, depending on the region you're at, they look and taste really different. It was hard for me to make it vegan, just because the white sauce, the aioli is hard to veganize. The aioli is basically just garlic mayonnaise and for the last two years, I basically just used vegan mayonnaise and added garlic to it. That's really good, too, but I wanted to figure out a way to make the dish completely out of healthy, fresh foods.
So what I did was to replace the aioli with another Spanish dish called ajo blanco. My grandmother recently showed me how to do it and for me, it works perfectly as a aioli replacement.

Ingredients
- 4 large potatoes
- olive oil
for the red sauce
- 2 cloves of garlic, chopped
- 1 small onion, chopped
- 4 large tomatoes, rubbed
- dried parsley
- chili
- salt
- olive oil
for the white sauce
- ½ cup of almonds, peeled
- 2 cloves of garlic
- 2 to 3 tablespoons of olive oil
- 1 tablespoon of white vinegar
- water
- salt
Instructions
To make the potatoes, cook them unpeeled until they're soft and then rinse them with cold water. You can leave them unpeeled or, if you like to, peel them now. Cut them into cubes. You can make them as small or big as you like. Then heat a large frying pan over medium heat and add some olive oil. Fry the potatoes until they're crispy.
To make the red sauce, heat a large frying pan over medium heat and add some olive oil. Fry the onion and garlic until they're cooked and add the rubbed tomatoes and a pinch of salt. Let it cook until most of the water has boiled away. Add some dried parsley and, if you like to, add some chili to make it spicy. Set aside.
To make the white sauce, peel the almonds by soaking them in hot water for some time. This way you can peel of the skin very easily. Put the almonds, garlic, olive oil, vinegar and salt in a high narrow container. Fill the container with water, so that the ingredients are almost covered. Be careful not to use too much water. Take a blender to mix it very well. The texture should be thick as in the picture, and not too liquid.
Put the fried potatoes on a plate and decorate it with the two sauces. Done!
