Recipe: Curry-Tofu with Chard, Pine nuts and Raisins
Ingredients
- garlic, chopped
- pine nuts
- raisins
- chard
- olive oil
- tofu, diced
- curry powder
- lemon
- salt
- pepper
- tomato „ojo de buey“, cut in slices
Instructions
Heat a frying pan over medium heat and add the olive oil. Put the garlic, pine nuts, raisins and chard in the pan, add a pinch of salt and cook it until it’s done. Then season it with salt and pepper.
At the same time, heat another frying pan over medium heat and add olive oil. Add diced Tofu, some salt and curry and let it fry for a while. Then, add a slice of lemon, cut into small cubes. At the end, add a bit of lemon juice and some pepper. The lemon juice will prevent the tofu from being too dry.
I garnished the dish with tomato slices with a bit of salt and olive oil. The type of tomato I used was „ojo de buey“ and the slices look just like flowers.
The dish should be ready in 10 minutes.
