๐ ๐ฑ Potato and Vegetable Mash Up! ๐ฅ๐
Hey guys, I'm here today with a really easy and delicious vegetable dish that you can whip up in no time at all!
I think one of the most magical food combinations ever is that of caramelised onions and potatoes, they are just a match made in taste bud heaven!
This dish is comprised of that amazing combo plus more tasty veg and a nice dose of nooch to get a bit of vegan cheesiness going!
What you'll need:
- Potatoes
- Mushrooms
- 1 red onion
- 2 cloves of garlic
- 1 large tomato
- Fresh spinach leaves
- Nutritional yeast
- Salt and pepper
- 1 tsp coconut oil
(I haven't given exact amounts as you can play this by ear depending on how many people you are cooking for)
Method:
- Peel, wash and chop the potatoes.
- Boil in salted water until soft.
- Chop the onions, mushrooms and tomatoes.
- Heat some coconut oil in a large pan or wok.
- Remove the potatoes from the heat and drain.
- Put the potatoes in the pan and cook on a medium heat for 2 minutes.
- Add the onions, tomatoes, mushrooms and garlic.
- Add some salt, pepper and nutritional yeast.
- Cook for 5 minutes, stirring occasionally to brown the potatoes on all sides.
- Finally, add the spinach and cook for 1 minute to soften the leaves.
- Serve with a final sprinkling of nooch and some black pepper.
That's all there is to it! You can throw in whichever veggies you like really, but I think this combination is really great.
I actually made enough for 2 people but ended up eating it all myself!

Thank you! ๐ Nooch is a nickname for an ingredient called nutritional yeast (a deactivated form of yeast). Vegans and veggies use it a lot in cooking as it is really nutritious containing protein, dietary fibre, various minerals including zinc, magnesium and copper, as well as B vitamins- namely a high dose of vitamin B12 (which is the only nutrient a vegan or vegetarian can't get through a plant based diet). Fortuitously it has quite a cheesy flavour so is great to use in vegan macaroni, and pretty much everything else! ๐
I'm with you on onions and taters! There is something so rustic and homey about it. Simple food can be so good!
