Vegan dinner
One of my biggest blocks/excuses of becoming Vegan was the being able to get the same joy from cooking as I did when I was a cruel eater.
Then I just started one day to cook nothing but Vegan, and all became clear, exciting and above all it gives me more joy than ever before.
I love to cook, the inspiration, the shopping/gathering, the preparing/chopping/ripping, the cooking, the timing. It’s not even all about the eating for me although that is a great way to finish the process. It’s a hobby, a pastime and something which calms me, balances me. I try to eat raw for breakfast and lunch. A hearty juice for breakfast with a superfood liqueur so I know I’m at my prime, high functioning state for the day ahead.
Lunch I usually have a big salad, filled with yummy goodness, with loadsa apple cider vinegar/lemon dressing (recipe to follow) which is yummy. Then some fruit.
I always have fruit/nuts on me at all times, to stave off any hunger and so I’m never tempted with processed, over priced shite.
Then dinner is where I “go to town” something cooked, prepared and yummy.
Tonight I’m having all fried up in a little coconut oil, butter beans, aubergines, peppers, little bit of onion (I try to avoid too much onion as it ain’t great for you) with garlic, chilli, a few dashes of Sanchi Soy Sauce, (organic gluten free) a load of coriander including the tasty stalks, some raw chopped tomato and avocado to finish with a big sprinkle of pepper. Oh and don’t forget a load of lemon juice.
I forgot to take a picture of it looking all finished and yummy with toms and ava...I scoffed it!
I know this isn’t the “perfect clean” vegan meal, but for me it satisfies all my desires and tastes bloomin great.
