Sweet potato Fritters and creamy kale and spinach with potatoes
This is my South African inspired vegan supper, Fritters and Imfino. Imfino is a traditional Zulu meal with leafy greans and potatoes, Fritters are also quite popular in South Africa, but I mainly ate corn Fritters and decided to change things up with sweat potatoes.
OK so here is what you need for the Fritters
Ingredients
2 sweet potatoes cooked
1 onion
2 garlic cloves
1/2 a cup of flour
Tablespoon chopped parsley
Teaspoon of ground coriander
Pinch of salt and pepper
I boiled the sweet potatoes with the skin and peel afterwards and put it in a bowl.
Then finely chopped onions, garlic and parsley and ground coriander.
Then flour, pinch of salt and pepper.
Then mix it up and let it stand for a bit.
Ingredients for creamy kale and spinach
Ingredients
5 potatoes
200g black kale
150g spinach
2 onions
6 garlic cloves
1 veggie cube
1 cup of plant based milk
Pinch of salt and pepper
First thing is to saute the onions and garlic.
Then chop potatoes into cubes and cove with water and add veggie cube, salt and pepper. Then add the kale, spinach and plant based milk and cook till potatoes are soft.
And supper is served.
