Maple Pumpkin Hand Pies

These flaky mini hand pies go perfectly with a hot cup of coffee or tea.

Preheat oven to 375° F.

DOUGH
1 cup all-purpose flour
½ teaspoon salt
¾ teaspoon baking powder
1 teaspoon ground chia seeds
1 Tablespoon sugar
½ teaspoon cinnamon
6 Tablespoons margarine + 2 teaspoons melted to brush pies before baking
3-4 Tablespoons cold water

FILLING
½ cup pumpkin puree
¼ cup packed brown sugar
¼ teaspoon cinnamon
½ teaspoon pumpkin pie spice
1/8 teaspoon cloves

GLAZE
¾ cup powdered sugar
1 Tablespoon maple syrup
1-2 teaspoons cold water

EQUIPMENT
Mixing bowl(s)
Rubber spatula(s)
Measuring cups/spoons
Parchment paper
Baking sheet
Pastry bag or Ziploc bag
Scissors

To make the dough, combine all the dry ingredients and mix thoroughly. Cut in the margarine or shortening using a pastry cutter or two forks. Once the dough forms pea-sized balls, slowly add the cold water until the dough holds its shape in one large ball. The dough should hold together well but not be sticky. Roll out the dough to 1/8 inch thick between two large pieces of parchment paper using a rolling pin. Cut the dough into circles that are 4.25-4.5 inches in diameter. The dough should yield about seven circles.
Line the baking sheet with parchment paper and place the circles on the parchment paper.

To make the filling, combine all the ingredients in a mixing bowl. Spoon one tablespoon of filling in the center of each circle. Fold the circles in half around the filling and press down the edges with a fork to seal the pies.

Brush the tops of each pie with the melted margarine.

Bake at 375° F for 20-23 minutes or until golden brown.

To make the glaze, combine all the ingredients in a mixing bowl (add just enough water to give the glaze a smooth consistency) and transfer to a pastry bag or Ziploc bag. Store in the fridge until ready to use.

Once the pies are golden brown, remove from the oven and allow to cool for 30-45 minutes before applying the glaze.

To apply the glaze, cut about 1/8 of an inch off the bottom corner of the bag and drizzle over the cooled pies.
