Recipe:
Ingredients
For the crust:
1 1/2 cup raw almonds
1 cup dates
1/2 cup old fashion oats
1 tsp fine desiccated coconut
For the filing:
2 cups cashews soaked for at least 4 hrs
4 @belvita Biscuits
1/4 cup melted coconut oil
1 tbsp lime juice
1 cup coconut cream
1/2 cup rice syrup or to taste
1 tbsp coconut sugar or to taste
1 large mango, peeled and cut
Method
For the crust:
Add all the ingredients in a blender or food processor and pulse until it becomes a sticky, crumbly texture.Transfer to a 4 inch spring form cheesecake pan and press firmly in the bottom of the pan.Set aside.
For the cheesecake:
Place cashews, biscuits, coconut oil, lime juice, coconut cream, rice syrup and coconut sugar in a blender and process until smooth and creamy.
Pour the mixture into the cheesecake pan on top of the crust. Place in freezer. Blend mango and pour on top of the cheesecake. Place in a freezer for 4 hrs or overnight. Let defrost for 30 minutes before serving. Enjoy!
