Here you go; Vegan week inspiration number 2. Our own favorite recipes to show you what we eat during a week!
Winter is suddenly coming in for full here in Norway, and that means that the nights become longer than the days, we will have snow, and temperatures sink below -10 C.
It is safe to say that it soon is time to travel to warmer countries and get some new food inspiration.
To create colorful and mindful food, with different spices and herbs has for me been a way of learning to take care of the body. An amazing way of showing self-love. My body is always rewarding me for taking care of myself, in one way or another.
Here are some of the delicious meals we ate the last week. And hopefully some inspiration for you that makes you eager to cook, create and take care of your body! All vegan of course:
Monday ~ Vegan cheese ohmlet:
Why didn't we know earlier that a vegan omelet, excuse me; ohmlet, could taste so good and like the real deal?
We have served this to several non-vegans that missed out the word "vegan" from "vegan cheese ohmlette". They were all pretty shocked when they figured that it didn't contain any eggs. Gluten-free, vegan cheese omelet. And so simple; Mix 50/50 of water and chickpea flour, stir in spices, and fry like a regular omelet. The best breakfast/lunch there is.

Tuesday ~ Indian-inspired Tofu masala with black rice & Salad:
Mmm, how I love Indian flavors. I stocked up on so many different spices on my trip to India, that I still didn't get a chance to try all of them out.
This recipe is super simple; Cube the tofu, fry it in the pan with some salt & pepper. Fry onion, chili, garlic, and ginger for about 5-10 minutes in another pan before adding in loads of different Indian spices. Add coconut milk, tomato puree and soy sauce, let it simmer while you cook rice & make a simple salad.
Wednesday ~ Healthy wraps with lentils, topped with mango & Hemp seeds:
This is one of our absolute favorite wraps.
Yes, there are many of them, and this one still scores 10/10 every time. Some days we crave something that is extra healthy. Fresh & fruity, but still a proper meal. Those days, wraps are often our dish of choice, and it never disappoints.
This wrap has a base of vegan mayo and lentils. It topped with a salad mix consisting of bell peppers, onion, salad, and raisins. The garnish is perfectly fresh and crunchy; Cubed mango, hemp seed, and chopped almonds. This wrap is soooo good.
Thursday ~ Bolognese inspired spaghetti dish:
This bolognese is really good!
Spicy, garlicky and very satisfying, which makes it a good candidate for a proper Monday-meal. With basil and vegan cheese on top, I do not feel like I have to say much more to convince you that this is a proper and tasteful meal! Here you go; the recipe!
Friday ~ Vegan shepherd's pie with sweet potato mash:
This is so much better than a normal shepherd's pie. Look at it!
This flavor bomb is made with veggies cooked in wine, TVP, a lid of sweet potato mash; This is the dish we make when we really wanna spoil ourselves and go over the top in the kitchen. It is a flavor bomb and the perfect dish to show non-vegans how tasty vegan food can be.
Saturday ~ Loaded sweet potato fries with fooled fork.
Loaded Fries. Yummy!
This is made with a combination of sweet potato and regular fries; feel free to use what you like. This time I used the 'Oumph pulled', with a layer of melted vegan cheese on top and with extra bbq sauce. I fried up some onion, chili, and garlic for garnish. We had both siracha & vegan Mayo on the side.
Sunday ~ Chipotle tofu, Oven baked root veggies & Mango-chili-mint dressing!

Breakfast of the week:
~ Oatmeal with dried raspberries, apples & chocolate.
This is the perfect breakfast when you want something to fill you up for hours.
Make oatmeal the way you normally do and cook it with 1 cubed apple, 2 tablespoons peanut butter and some agave syrup. stir in dried, frozen or fresh berries, and top with dark chocolate and nuts. Your tummy will thank you!
Sweet of the week:
~ Vegan pancakes with home-made Nutella.
Some days you just wanna have an endless morning. Cozy up in your blanket, make a cup of tea and have pancakes for late breakfast.
Yes, you can make the most perfect and fluffy American pancakes without having to use any egg or dairy products. A happy day calls for pancakes! Here is my favorite recipe.

Wow.. this is really inspiring. Resteemed! I will definitely try some of these recipies. Where do you get the chickpeas flour? Do you find it at regular stores like kiwi or do you have to go to the ethnic shops? Also, do you know where I can find "liquid steam" to make smoked vegetables taste like salmon?

I buy chickpea flour at the ethnic vegetable shops, most of them have it in either 2 or 1 kg package for about 40,- Norwegian kroner. It looks like this:
Most of the ethnic shops also have spices like black salt, tumeric and smoked paprika which is awesome for ohm-let. 😊
If you are referring to liquid smoke, I usually find that on all meny stores in Oslo, and Sunkost on Gunerius also have it:
