This looks delicious. I will try this recipe for sure. I love it how you used the rice milk and coconut milk instead of dairy milk. I normally cook rice pudding with cow milk. Now I will try using rice milk and coconut milk instead of dairy milk.
And mixing rice pudding and fresh fruits is a very simple but interesting idea. I will definitely try making this dessert . Its so simple and easy to make and yet it looks so interesting and refreshing and delicious.
