You can eat any size pumpkin though pie pumpkins are supposedly grown to be somewhat sweeter their actual purpose to being so small is they provide just enough pumpkin for a couple pumpkin pies, maybe enough left for some pumpkin bread. I actually prefer a larger pumpkin as if you are going to puree to freeze for holiday use you only have to cut and clean one large pumpkin to provide for all your winter holiday use.
If you've never made pumpkin pies from scratch you don't know what you are missing, the taste is exceptional compared to store bought. My family can't get enough of my pumpkin bread either, it's become a high demand item at family gatherings. Last year was my first attempt at pumpkin rolls but despite the design shortcomings they were still gobbled up.
Don't forget to gently turn your pumpkin so that all sides ripen pretty equally.

You are correct, they use what are called sugar pumpkins, a smaller, sweeter pumpkins better suited for pies.
I have never made a pumpkin pie from scratch (unfortunately).

I've got a great pumpkin bread recipe, I lost it once and never could achieve the same moist results. Lucky for me there was a blog on disqus that people posted a lot of recipes and I asked if anyone had the recipe for pumpkin bread where you add two thirds cup water as you are mixing the wet and dry and ingredients and someone actually had the recipe. If you don't carve your pumpkin for Halloween maybe you can make a deal with your better half and tell them you'll cut and clean the pumpkin, soften it in the oven if she'll make you some pumpkin bread.
