Recipe! Welsh cakes

Today I'd like to share how to make Welsh cakes

Welsh cakes are a type of sweet flat-cake like biscuit. A bit hard to describe! They are a traditional dish from the country of Wales, which is in the UK!

Traditionally, they are made with raisins, but nowadays, they can have anything from chocolate to biscoff!

I really love welsh cakes so wanted to make some!

For the ingredients I used:

  • Plain flour 225g (the recipe is supposed to use self-raising but I didn't have any)
  • a teaspoon of baking powder
  • pinch of salt
  • butter 100g (softened is easier)
  • caster sugar 50g
  • raisins/currants 50g
  • 1 medium egg
  • 2 tablespoons of milk

The above picture is of the ingredients I'm going to use! I had a plan to make some chocolate ones but might have to do another post as I can't put all the images into just one post (too many!).
I added to my raisin Welsh cakes some ground cinnamon just to mix it up a little!

Steps


So to start, I first sifted my flour, baking powder and ground cinnamon into a large bowl. I tried to soften some butter, but should've softened it a bit more than what I did here (but not melted!).

I mixed the dry ingredients together a bit before using my hands to mix the butter and dry mixture together, into crumbs.

In a separate bowl I whisked the egg and milk together, before adding it to the crumb mixture.

I mixed that up a bit before remembering I needed to add the raisins!

After that was mixed together (using a bowl and then just my hands). I placed half of the dough onto a floured surface, ready to roll out.

I rolled out the dough to about 5mm in thickness, don't want it too thick or thin! When I got it to a thickness I was happy with, it was time to cut out the shapes. Welsh cakes are traditionally round with an almost serrated edge, but I decided to also use hearts and clover-like cutters too.
In the picture below, the metal cutter is what the traditional shape of Welsh cakes is like.

After cutting out as many as I could (making sure to use the most of the dough as I could), I placed the shapes onto the pre-heated griddle I had ready. Welsh cakes are cooked on a griddle, almost like pancakes. I just use an old crepe machine I had (flat surface which gets distributed evenly) and that works well for me!

After a few minutes, I flipped them for their golden side! Some may have broken but that won't affect the taste of course.

And I was done with the raisin Welsh cakes! I made another batch afterwards with chocolate chips and I will show how I did that in another post 😊

This recipe can get a lot of Welsh cakes out of it and is both delicious and easy! I'd recommend giving it a go.
