BOATING the Pacific & a FRESH LOCAL CEVICHE RECIPE!
We only intended to stay a month, and now we are thinking of staying even longer...what changed? Our new found love for the ocean!
We have been RVing full time for 14 months now and it has been an adventure to say the least. But, after coming down to Mexico and finding a quant cute town, then hopping on a boat tour to catch some oysters, we are now hooked! We decided to purchase a blowup Avon Ocean Seaworthy boat.
We were even able to find the original motor that came with the boat and for $20 we had it repainted to look like new again!
Our Newest Member to the Benade By Nature Family
We love to go out fishing as a family together. Normally, we catch a fish called "Bota" which means "Boot" in Spanish. It is a great fish to eat because it doesn't have any scales and has beautiful large fillets with no bones.
But, as the Pacific Ocean warms...and it's warm oh boy, the Bota move out and small Red Snapper become quite popular!
Now that we are catching FRESH FISH, we love to make meals with this fresh meat! Our favorite...CEVICHE!
Here's a CEVICHE recipe from a local in Lo De Marcos!
Dice 5-palm size fish fillets (boneless/skinless)
Squeeze Fresh Lime covering all the fish entirely
Salt/Pepper quite a bit
----Let sit for at least 15 minutes while it naturally cooks-----
Meanwhile...
Dice small cubes of 4 peeled cucumber
Dice 3 tomoatoes
Finely chop 1 Cup of Cilantro
Finely dice 1/2 of a purple onion
Mix all together and put on some tostadas!!
Enjoy!
