Ugh, my list is very long aswell! My boyfriend really wants to visit Iceland some day, so that's on our list aswell. Norway should be amazing to see too.

In Scotland, I really couldn't tell you what's better, highlands or lowlands. They both have their own charm and you should definitely do a little tour through the whole country to get the best experience!
