"Pork Sinigang" | My Favorite Traditional Dish | Entry
What is your favorite traditional dish?
That is the question @ngocbich asked on her contest. And to answer that question, this is the dish that came into my mind:

There are many traditional dishes here in the Philippines, and Sinigang is one of those dishes. And this is the one that stands out for me.
Sinigang is a stew known for its sour taste caused by tamarind seasoning powder. Its main ingredient is meat, and a lot of vegetables like eggplant, kangkong or water spinach, radish, sitaw or string beans and okra or lady's finger.

As you can see, there are a lot of variations that you can try if you don't want to eat pork. Or if you're a vegetarian.
I have tried different variations of Sinigang, but I would say that Pork Sinigang is my favorite.
I've always love it ever since I was a kid. My Mom always cooked Sinigang, until now. When I was a kid, I remember, I used to drink the soup or the broth of Sinigang after eating. Hahah. My Mom is fine with it as long as I eat rice. Hahaha.
How I like my Sinigang?
I love spicy food. That is why I liked my Sinigang dipped into some fish sauce with calamansi and chili.
Even my partner cooked Sinigang sometimes. I really love how she cooks Sinigang. She has her own way in cooking this dish. Here let me show you a photo that she cooked for me:
This is also a Pork Sinigang, but she fried the pork first before putting it into the soup.
Recipe:
Let me share to you guys on how to cook this dish if ever you want to try it.
2 lbs pork belly or porkchop
1 bunch string beans
1 bunch water spinach
2 pieces tomato
1 tbsp cooking oil
2 liters water
1 onion
1 pack sinigang mix (good for 2 liters water)
Okra
Eggplant
Fish sauce, to taste
Chili
Cooking Procedure:
- Heat the pot and put-in the cooking oil.
- Saute the onion.
- Add the pork belly and cook until it turns light brown.
- Put-in the fish sauce and stir well.
- Pour the water and bring to boil.
- Add the tomatoes then simmer for 40 minutes or until pork is tender.
- Put-in the sinigang mix and chili. Add fish sauce to taste.
- Add the string beans and water spinach and simmer for 5 to 8 minutes or until the vegetables cooked.
- Turn off the heat. Serve hot.
(If you want to try our way, you just need to marinate the pork into the breading mix then fry it. You can just add it into your soup once the soup is cooked.)
Just remember to serve it while it's hot. It is best to eat while the dish is hot. It is indeed the best dish to eat specially to those places with a cold weather. 😉
