Hi @skey! The swirly thing is kind of steamed fish pasted - the pink is just coloring added. I think there is a historical reason it's pink. The raw ingredient is called 擂り身, or surimi.
Ay, interesting. In Germany we have also surimi in Sushi. But it's for imitating crab meat ;)
