Fascinating, Charlie. I would probably want to teach meditation, yoga, or creative writing. I think all three would be beneficial in that environment.
Those three would be awesome, but not official paid jobs. You can still start classes, which many people did. For example, my yoga teacher held 4 classes a week so you could imagine he was really busy. However he had to have a "real job" too so he cleaned the bathroom which took 20 minutes a day.
I thought that no jobs got paid at all... then im not sure about Greek prisons )
