Steemkitchen - Spicy Oatmeal with Peanuts, Parsley, and Ginger.

Today, I bring you the second installment of my savory oatmeal recipes. What is great about these recipes is that they keep you feeling full for longer than usual. What's more, it prepares you for a massive gym session.
I just made this recipe tonight and it turned out quite well. As I am fasting during Ramadan, this is light on the stomach but keeps you full for a long time. I did, however, make some adjustments to the recipe .
What is should look like:
INGREDIENTS
Serves: 2-4
2 cup of old-fashioned rolled oats
4 cups water
1 tablespoon olive oil
1 teaspoon black mustard seeds
2 tablespoons unsalted peanuts
1 cup of chopped onion
1 teaspoon of chilli powder.
1-inch piece ginger, minced
1 teaspoon of cumin
1 tomato, diced
Salt to taste
1 small handful parsley (or to taste), chopped
Directions:
One: Combine oats and water and cook on high heat(on stove) for about 5 minutes. I pre-boiled the water in the kettle to speed up the process. Set aside.
Two: Heat olive oil in a skillet over medium-high heat and add mustard seeds. When they start to pop (about 1 to 2 minutes), add peanuts, onion, ginger, chili powder, and cumin. Stir and cook about 3 minutes, until peanuts are lightly toasted and spices are aromatic. Add tomato and salt to taste.
Three: Pour in oatmeal and cook another 1 to 2 minutes, until heated. Stir in parsley and serve.
