I needed to make some party sandwiches and went all the way out with my ingredient of the week - beet. Finger sandwiches are the best party food to serve your guests. Even if you are not hosting a party, they are great snacks too.

As mentioned, beet is the main ingredient for ALL my creations this week. I have to say that I am very happy with my party sandwiches made with beet.

In total, I came up with a set of 3 finger sandwiches as my party sandwiches. In fact, one of the three was inspired by @jaybird by using carrot and peas, as he mentioned them in a comment earlier. Hope in some small way, I could make something in his honour to thank him for providing a platform for us to unleash our sandwich creativities.

Finger sandwiches are really fun to make. Yes, I acknowledge it’s a LOT of work up front, to prepare the fillings and what not. However, once all the prep work is done, the rest is quite easy.

The trick is organization and organization, and also believe that a little bit of hard work at the beginning would allow you to enjoy yourself in the end, which is more or less my life philosophy.

Below are brief descriptions of my set of 3 party sandwiches:

Beet Parmesan Pine Nut Arugula sandwich (See the middle in the photo right above):

The ingredients are: Roasted beets, olive oil, parmesan cheese, pine nuts, arugula, salt and pepper.
The steps are: Roast the sliced beets at 400 for 30 minutes. Mix Parmesan, pine nut and arugula in food processor along with olive oil. Season. Sandwich the mixture between the beets.

Beet Mayo Egg Open-face Sandwich (See to the right):

The ingredients are: Roasted beets, mayo, eggs, salt and pepper and dark rye bread
The steps are: Mix the roasted beets, mayo, salt and pepper in food processor. Slather a generous portion of the beet mixture to the bread and top with eggs.

Rainbow Sandwich (See to the left):

The ingredients are: Carrots, Peas, Roasted Beets, salt and pepper, olive oil and white bread
The steps are: Steamed peas and carrots and beets. Mashed with oil and season with salt and pepper. Layer each fillings on top of each bread. Cut into pieces to showcase the colourful fillings.

These beet inspired party sandwiches were a big hit. The ingredients were simple and I couldn’t agree more with @bleedpoet that, sometimes, we have to keep it simple stupid, LOL.

So basically every time I think you've touched your limits, you one up yourself lol.

These are really great. I especially like the Beet Parmesan Pine Nut Arugula sandwich. That one sounds top notch to me. Although, the peas and carrots one looks the best visually.

We're definitely going to set up a Toronto meet up sometime prolly in 2018. You're making snacks for everyone lol !!!

haha, I figured as much. @dan-atstarlite and I have been thinking about it for a while now. Need to find a good loungy place for the early part around 7 or 8 and then I have a great spot for the animals later ;)

Yum! Very creative! There's this Eastern European beet salad I like to get sometimes that's more like a chunky beet spread. I think it's mostly beets and sour cream but it's so yummy! I bet it would make a nice finger sandwich filling. Normally I eat it with pierogis.

I get it from the European stall in the downstairs of St. Lawrence Market in case you're curious to try it. The store has a very generic sounding name like "European Foods" and it's kind of in the middle of the market behind a juice store. I always buy bags of their frozen pierogies to take home too.
