Steemit Sandwich Contest Week # 5 - Beet Theme Sandwich (1st entry): Beet Pesto Avocado Cream Cheese Sandwich
I always like a challenge and for this week’s Steemit Sandwich Contest, I am going to challenge myself by using beet as the ingredient to create ALL my sandwiches.
As a matter of fact, I love playing with colours when I am in the kitchen. When I do grocery shopping, there are times I would decide on what to purchase based solely on the colour mode I am in.
Lately, I am really into pink, red and purple. Hence, I bought a lot of beets this week, hoping to make something colourful (plus tasty, of course). This is actually how I came up with the idea to use beet as the theme for this week’s contest.
Seriously, you could do so much with beet in the kitchen and the possibilities are endless. Awhile ago, I came across a roasted beet pesto recipe and I was captivated with the colour. I couldn’t get this beautiful pesto out of my head. Unfortunately, I didn’t bookmark the pesto recipe and so I am re-creating it based on my memory. Luckily, the pesto turned out nicely (a test to confirm that my memory is still intact, LOL)
Let’s make the pesto first:
Ingredients:
1 beet (cubed, wrap in foil and roast at 375 for 45 minutes)
2 cloves garlic (pressed)
1/2 cup parmesan cheese
1/2 cup chopped walnuts
1/2 cup olive oil
2 tbsp lemon juice
Methods:
Add baked beets, garlic, cheese, walnuts and lemon juice into blender to mix. While the blender is going, add olive oil slowly. Adjust the thickness of your pesto with water if necessary.
After the pesto was prepared, I proceeded to use this pesto to create a sandwich with avocado, cream cheese and pumpernickel bread.
My intention here is to use this sandwich to illustrate how beautiful nature is and how lucky we are to have access to such tasty, healthy and colourful looking beets and avocado. Of course, we human are amazing too as we invented cheese and bread making.
Overall, the colours and taste of this sandwich are quite incredible. Due to the very tasty pesto, I have to keep this sandwich very simple, otherwise, it would ruin the taste. But remember to be generous and slather tons of pesto (don’t be shy).

Haha - That's right, you got it. Plus, I bought too many beets this week and I need to find ways to finish them... My day job does not allow me to be creative. This contest provides me the opportunity to try crazy things and it's very satisfying!!
