STEEMIT CULINARY CHALLENGE #41 - GOLDEN AREPAS
Hello Steemit Culinarians! Today I present to you my entry for the Monochrome edition of the Steemit Culinary Challenge, hosted by the wonderful @woman-onthe-wing!
I'm just loving this week's guest judge, @progressivechef and his Monochrome theme. It's a stretch to create a well-composed meal where all of the components are different shades of the same color.

For this week's Monochrome theme, I waffled between green, yellow, and pink for a while, and ultimately, I settled on nothing less than...
GOLD!
Go big or go home, right??
This Golden meal consists of turmeric Arepas, delicious little corn cakes, topped shredded melty queso de quesadilla, with a mixture of no less than 5 shades of Golden spiced roasted vegetables, and finally topped with a runny Golden-yolked egg.
In the Washington DC area, the authentic South American food restaurants serve some of the best Arepas. There are even restaurants that specialize in Arepas. These palm-sized, griddled corn cakes are often topped or stuffed with chicken, beans, cheese, or grilled meats.
These Golden corn cakes are a perfect canvas to carry a nutritious mix of vegetables and a homegrown egg.
Here's how to make these delicious Golden stacks for your next Monochrome meal!
Arepas
Ingredients
- 2 cups masarepa
- 2 1/2 cups lukewarm water
- 1 t salt
- 1/2 t turmeric
Directions
- Combine all ingredients and knead until a smooth dough has formed.
- Using your hands, shape the dough into 8 discs, about 1/2 inch thick.
- On a hot pan coated with a thin layer of oil, griddle the arepas for a few minute on each side, until the surface of the arepa is crisp.
Golden Roasted Veggies
Ingredients
- 1 head cauliflower
- 1 yellow summer squash
- 1 orange bell pepper
- 1 ripe plantain
- 1/2 onion
- fingertip-sized chunk of ginger
- 3-4 cloves garlic
- 1 t cumin
- 1 t turmeric
- 1 t salt
- 1-2 T olive oil
Directions
- Chop all of the veggies to a medium dice.
- Using a mortar and pestle or a food processor, combine the ginger, garlic, oil, and spices until they've become a thick paste.
- Toss the veggies in the spice paste, adding more oil as needed.
- Roast at 350°F for 30-40 minutes, until golden and cooked through.
Assembly
- Top the arepas with shredded cheese. I used queso quesadilla because it's very melty and has a golden tint.
- Stick them in the warm oven to let the cheese melt and do it's thing
In the meantime, fry up some sunny side up eggs.
Add a big pile of the veggies
Add a sunny-side up egg and LET THE YOLK RUN DOWN!

Oh my goodness what a beautiful entry this is! Not only does it look gorgeous and shimmering in all its golden glory, but this is something I'd LOVE to eat as well! It's kinda like a super luxurious sandwich fit for a Steem Queen! I'll have to see if I'm able to get hold of some masarepa... Would you happen to know of a suitable alternative if I can't? You were really successful in getting many golden shades, and getting a really good selection of nutritious ingredients into it. I think these monochrome dishes would be a great way to lure children to eat things they normally refuse, no? Who could turn their nose up at a golden meal! I'm very impressed, and also have to say what a brilliant photographer you are, these photos are amazing. Good luck @jaymorebeet!
Thanks so much @woman-onthe-wing! One of my little ones loves blue....not sure how on earth I'd pull that one off and keep it healthy!! For the masarepa, a little research tells me that instant polenta would be a good substitute. OR if you can find cornmeal, then grind it in your food processor so that it's fine like coarse flour. Thanks again for your support! This challenge is so much fun and really gets me thinking!

Hahaha amazing! I Was going to play with tumeric too but I had no time because of work I really wanted to whip up something cool and beautiful, too bad I am really busy right now and I don't have the time to do it :(
Beautiful work this is great I love it and I love the cauliflower and the eruption of egg on top looks like a flooded lagoon of delicious gold falling on top of a golden mountain ahhaha :D
