That's a really interesting process for the peking duck. So basically they make space between he flesh and the skin, then pour in between whatever ingredients and then deflate the skin? Wild....

Yes almost right! They actually dried the skin by hanging in open air before roasting to crispen up the skin while cooking the meat.
