STEEMIT CULINARY CHALLENGE #40: Vegan Taco Bowl W/ Spicy Walnut Meat, Cauliflower Spanish Rice, Homemade Salsa, Guac and Cashew Cheese!
Hiya Steemians! SCC calls for a Mexican theme this week and being true to the mission here at @plantpowerparty, this recipe is going to be made using plant-based ingredients!
No gluten, no sugars, no meat-products. Let's see if you can tell the difference!
We've got spicy walnut meat, cauliflower Spanish rice, homemade guac, homemade salsa and homemade vegan cashew cheese to kick this dish up a notch!
Let's get started shall we?
You certainly can buy your own salsa and guac but in case you'd like to make your own like this recipe, here's how to do it! While you're making the accompaniments, boil 2 ears of corn and about a cup of black beans (suggested to soak the beans over night prior!)
Step 1: Guacamole!
Ingredients:
(To make enough for leftovers)
- 2 ripe avocado (soft to the touch)
- 1 tomato
- Juice of 1 lime
- 1/2 onion
- 1/2 green bell pepper
- Garlic to preference
- 1 extra pepper if you like it hot!
- Pinch of salt
Method:
Take everything and put it into a food processor, pulse away until you get your desired consistency. (Can be made chunky if the ingredients are pulsed slowly!)
Now the guac is done, set it aside in the fridge for later!
Step 2: Salsa!
(Salsa is similar in ingredients to guac so you'll notice a lot of the same items here!)
Ingredients:
(Measurements vary based on how much you are making! This is enough for a side for several meals!)
- 6 roma tomatoes
- 1/2 onion
- 1/2 green bell pepper
- Handful of garlic (to taste)
- Fresh cilantro (to taste)
- Juice of 1 lime
- hot peppers if you like it hot!
- 1/2 tbs rice vinegar
- 1 tbp cumin
- 1 tbs cayenne
- 1 tbs coriander powder
- 1 tbs white pepper powder (can use black if you have that instead!)
- 1 tbs sunflower oil (or olive/coconut oil)
- shake of salt
Method:
Get the food processor ready again! Everything needs to go inside! Pulse to desired consistency!
Set aside, covered in the fridge with the guac!
Step 3: Vegan Cashew Cheese
Ingredients:
- 1/2 cup soaked cashews (soak in water overnight, drain and use)
- 2 tbs sunflower oil
- 1/2 lemon (juice only)
- 1 tsp apple cider vinegar
- 1 tsp cayenne pepper
- 1 tsp nutritional yeast (gives it the cheesy flavor!)
- (optional) garlic cloves
Method:
Place all ingredients in food processor like this personal blender!
Blend until smooth!
Check on the corn and beans, if they are ready (soft) put them aside for later. (In this example, both were cooked separately as they have different cook times!)
Step 4: Spicy Walnut "Meat"
Ingredients:
- 2 cup soaked walnuts (soak in filtered water overnight prior)
- 1 red pepper (for spice)
- 1 tbs cumin
- 1 tbs coriander powder
- 1 tbs cayenne (if you like hot!)
- 1 tbs chili flakes
- 1 tbs paprika
Method:
All of the ingredients go into the food processor and get pulsed until the texture is similar to minced meat! Seriously, this is probably the best part!
Set aside and let's get the rice cooking!
Step 5: Spanish Cauliflower Rice
Ingredients:
- 1 head of cauliflower (chopped into smaller pieces)
- 4 small tomatoes
- 1 green bell pepper
- 1 onion
- garlic cloves to taste
- 1 tbs cumin
- sunflower oil to stir-fry
Method:
Chop everything up into smaller pieces so the food processor can handle it, then dump it all in and pulse! You should be getting used to this by now!
Next, pour the mixed ingredients into some oil on a skillet and stir until softened.
Let it cook on low, keeping an eye on it while you move on to Step 6!
Step 6: Crispy Mushrooms
Ingredients:
- 1 cup of mushrooms (this recipe used white oyster)
- 1/2 bunch of green spring onion
- 1 tsp cayenne
- 1 tsp cumin
- 1 tsp white pepper powder
Method:
Cut mushrooms and onion, then stir fry with spices and some oil (I used coconut) until desired crunchiness. Let it cook while you move onto Step 7!
Step 7: Black beans and corn
Ingredients:
1 cup soaked and boiled black beans (remember you were supposed to be making them earlier?)
2 ears of corn (cut the corn from the cobs)
1 tsp pepper
1 tsp salt
1 tbs coriander
Method:
Mix the beans and corn together with the spices and heat up in some oil!
Great, now you've got all of the pieces to the meal! Let's just cut up some lettuce and then start making the bowls!
Step 8: Create the bowl
Method:
Start with empty bowl
Add in rice
Add in beans/corn and some fresh lettuce
Top off with walnut meat
Dress with mushrooms, cheese, salsa and guacamole
Step 9: Enjoy the Mexican fiesta in your mouth!

Oh wow! You've seriously gone all out for this theme @plantpowerparty and I'm well impressed! This would be a perfect feast for having friends over, or for a movie night, or when sitting out on the veranda enjoying a warm sunny evening... (I'm fantasising now... here in Donegal, Ireland, it's rained most days all summer). But this spicy Mexican meal is sure to bring some heat if not the sunshine!
I love all the different components - I'm a big fan of guacamole and salsa both, and yours look fantastic and super fresh. I didn't know nutritional yeast gives a cheesey flavour as I never used it, but perhaps now I will so that I can make cashew cheese too. I've seen others make it but no-one mentioned the cheesey taste before, so now it makes sense! That's a very interesting recipe with the walnuts, and I will have to try that out also because I don't eat meat and would like to reduce the meat in my husband's diet, so this is something we could eat together. Sounds great! This dish is packed full of nutritious ingredients, I really love it :-) Now we'll just have to wait to see what our recently-turned vegan guest judge @tioluis thinks of this! Good luck
Hi! Thank you so much, it was pretty much an all day affair between the soaking and prepping but so worth it! Unfortunately, I noticed a snag in my entry... I forgot to add it onto the post so who knows if our judge @tioluis even got to see my creation!
As for nutritional yeast- yes! It's full of vitamins and is super good for you but does contain quite a cheesy taste so is common in vegan cheese recipes!
The walnut meat was an experiment and was the best part of the whole meal as it has the very same flavor and even similar texture to taco meat! I am positive it would be well received by even the biggest meat eater!
The Spanish rice turned out really well too... especially with the cauliflower instead of rice, it was lighter and not too dense.
