The first and foremost is that honey contains less moisture which is main reason for organisms to survive.

Second reason is that honey is acidic which makes life difficult for organisms.

Third reason is it contains hydrogen peroxide in small amounts which also doesn't support growth of organisms.

All the three reasons above make honey eternal for years .

Remember all this is true , until honey is properly sealed. Once it starts absorbing moisture it becomes perishable.
