Cheap vegan eats! - Mexican rice bowl

Ingredients
Serves 2
1 cup cooked brown rice
1/2 cup black beans
1/4 cup cilantro, fresh
Tofu
Flour
2 cloves minced garlice
Cayenne pepper
Non dairy milk
Whole tomato
Whole avocado
Can of corn
Crushed tortilla chips
Salsa
Hot sauce of your choice
Taco seasoning
Instructions
- We'll start with cubed tofu. Press the water out of the brick of tofu. You can cover it in paper towel and put a heavy book on top for this step. Let it sit for 10 minutes.
- Once the tofu is cubed, you can dip it in milk and then a mixture of flour with a dash of cayenne pepper. Make sure the cubes are well covered.
- Heat up some olive oil with the minced garlic. Once the garlic is slightly translucid throw the tofu in the pan.
- During the same time, heat up the black beans in a pot with your favorite hot sauce and taco seasoning. Let it simmer.
- Chop up your vegetables while everything is simmering and you can start preparing your bowl
- Fill your bowl with the brown rice, layer your black beans, tofu, corn, chopped vegetables and add salsa on top. Sprinkle your cilantro and tortilla chips to top it off
- Enjoy!
