Spanish omelet
Ingredients:
✦ 1 Cup water 🍶
✦ 1 Cup chickpea flour
✦ 300 g of potatoes 🥔
✦ 2 tablespoons olive oil
✦ 1 head of large red onion
✦ a pinch of black salt
✦ salt and pepper to taste
Method of preparation
Heat 1 tablespoon of oil in a large frying pan and add the chopped onion and potatoes. Cook on low heat for 20 minutes until potatoes are soft. If necessary, add a little water to the potatoes quickly cooked.
Meanwhile mix the gram flour and water, season with salt and pepper.
When potatoes and onions are ready, add to chickpeas and mix gently.
Wipe the pan and heat the remaining tablespoon of oil. Add mass and cook over medium heat for 5-8 minutes until the bottom is baked.
As soon as the top dries slightly, gently turn the omelet and fry until Golden brown. After slicing and serve hot or chilled with green salad. Refrigerate for up to 3 days.
