That pink is such a gorgeous color. I'd probably try it as long as nobody told me what it was. I think I may have had raw beets on salad before. It probably helped that they were totally soaked in dressing. (Yuk-phooey!!)

Cooked young beetroot actually is super sweet and super tasty :)
